Order yours surfaced on both sides so it's flat and ready for you to use as is or apply your finish after some minor sanding.
Save a few bucks by ordering them rough sawn and flatten and finish on your own.
Please review photos as most pieces have cracks. This is the nature of cookie slabs. They crack because there is a speed of drying gradient from the center of the cookie to the edges.
